With all of the Estate owned vineyards now producing fruit, we are able to take advantage of individual characteristics of each particular vineyard. With different soil types and vine age at particular sites we can obtain a mouth-filling profile of flavours from typical Marlborough herbaceousness, to very ripe tropical flavours.

Truly a variety that is made in the vineyard, clean and ripe fruit will always produce great Sauvignon Blanc. After pressing, the wine is chilled and allowed to settle over a 24 hour period. The wine is then racked, inoculated and fermented at cool temperatures for 15-20 days. After fermentation and maturation the various tanks are broughttogether to make a final blend.

The 2016 Sauvignon Blanc is very intense. Sensational weather in the later parts of the growing season meant the grapes hung on the vines for two weeks longer than normal allowing hugely intense aromatics to develop without becoming over ripe. The aromatics are capsicum, and tomato leaf, dried herb, and passion fruit. Food Matching

Sauvignon Blanc can be enjoyed on many occasions: either on its own as an aperitif, or accompanied by seafood and salad dishes. Serve lightly chilled.
