Deep and bright gold yellow The nose is expressive but not heavy : peaches, custard apples and a slight touch of limeade here, just above some floral notes of jasmine and a typical minera hint. discreet touches of creamy vanilla and bread crust are added by the soft barrel aging. The mouth, still young, also shows this aging through a straight structure that allows a good balance with the natural fleshy texture. Lush but fresh, the wine offers a mineral finish with floral accents and yellow fruits.

STYLE: Fresh, aromatic, elegant and structured.

AGE OF THE VINES: 17years.

VINIFICATION:
The grapes have been harvested between in the third week of March, in small 12 kg containers. The story begins at 6:30 am, when people enter the vineyard to select only healthy and perfectly ripe bunches. A second selection is made just before entering the press, destemmed, under gas protection. The press time is around 3 hours, with low pressure and few rotations to obtain the cleanest and clearer juice as possible. The juice is decanted 24 hours, and once clean, fermented with selected yeasts. Temperatures are totally controls, between 14 and 16°C, to keep all the potential. When fermentation is well advanced, the juice goes to French oak barrels to keep on fermenting. From fermentation until the end of the process, wine is in contact with its fine lees, removing them (batonnages) twice a week to get better volume and character. The barrels are checked every week, until finding the perfect balance between fruit and wood. When we reach the expected balance, around 10 months after, we take out the wine from the barrels and keep it during two months in tank, checking its evolution before programming its bottling.

French barrels of 400 ( mainly ), 350 and 228 lts such as: Remond, Adour Grand Cru, Taransaud and Dargaud with medium largo and light toasts, mainly Bertranges, Jupilles, Nevers and Vosges forests. 10% new, 30% second, 30%third and 30% fourth use during 8 months.
BEST ENJOYED: Until 2020.
