What does sherry taste like?

Sherry wines have distinct sensory characteristics which are unique in the world of wines; they range in colour and flavour from the pale, dry Amontillado, with its nutty profile to the rich and opulent      Pedro Ximénez, a sweet dessert wine     .The lightest and driest are fino and Manzanilla styles. In between you can lose yourself with an off-dry Oloroso, the salty freshness of a Manzanilla or the fruity aromas of cream varieties. In fact, there are ten basic styles and most of them are dry. These dry styles offer extensive gastronomic combinations and drinking pleasure; that is why world-renowned chefs are now incorporating sherry fortified wine in their menus.

Because of the variation in styles, the taste and aroma of each variety is different. The most common version of the wine is Fino which means ‘refined’ in Spanish. The Hidalgo fino sherry for example is one of the driest. Fino sherries have light, delicate tasting notes with herbs and lemon and a fresh bouquet. On the other hand, aged sherries like Oloroso and Amontillado share nutty undertones.

 

The perfect food pairing

Sherry is the ideal partner for a variety of dishes. Because it is a highly alcoholic wine, ranging from 15% ABV to a stronger 22% it is often enjoyed at the end or beginning of a meal, similar to port. Traditionally it is drunk alongside tapas or hors d’oeuvres.

 

However, because of its wonderful range of savoury and nutty aromas this versatile drink will complement appetisers, main courses and desserts. Choose a medium dry to sip with fishy starters or savoury pastries or pair a blended medium sweet with oriental spiced foods, blue cheeses or pate.

  • Manzanilla – It is perfect when served chilled alongside Spanish tapas or paired with all seafood: mussels, prawns, sardines or sushi.
  • Oloroso – means fragrant. Typically a sherry wine for main courses with meat. Drink with red meats, game, casseroles and mature cheeses.
  • Cream -Pedro Ximénez: Sublime for drinking with desserts. Pair with vanilla ice cream, fruit, chocolate or Tiramisu.

Hidalgo Alameda. Hidalgo makes Alameda by blending the older and smoother Oloroso with a cream sherry made from Pedro Ximenez. A voluptuous treat that can be enjoyed as a perfect end to a meal.

Hidalgo Pedro Ximenez Triana. The Pedro Ximénez grapes are dried on straw mats before being fermented and fortified, after this they are aged under the solaria system like other sherries. The drying of the grapes intensifies the sugars and the result is an intensely sweet sherry wine.
