Description

Tasting notes: Having great depth of colour this beautifully fragrant Pinot Noir shows ripe plum, cherry fruit, dried herbs and chocolate/ spice characters along with impressive weight. The vibrant fruit flavours are surrounded by a layered tier of tannin, oak and acid delivering a long luscious finish

Destemmed then crushed into open top fermenters the grapes were subsequently cooled rapidly. After cold soaking for colour extraction, the must was then warmed and a mixture of indigenous and cultured yeasts were employed for primary fermentation.

During fermentation and the post ferment maceration process the cap was plunged daily to extract maximum flavours and colour. The wine was then left in tank to ‘post macerate’ on its skins. When the desirable flavour profile was reached the wine was pressed off, settled and transferred to a mixture of new and old French oak barriques. These barrels were put through full malolactic fermentation and left to mature and develop on lees.

Food matching

Ideal with patés and salami, this wine matches beautifully with beef and lamb dishes, and try also pairing with game. Don’t be afraid to serve with a dark chocolate mousse either. Drink now or cellar for up to 5 years

Our friend, Allan Scott is one of the iconic figures in the short history of the wine trade in Marlborough. As a viticulturalist, he was deeply involved in the first plantings of vineyards there for the two leading companies of the time, Corbans and Montana. In 1990, he launched his own venture, using grapes from his own vineyards on the prestigious Jacksons road, opposite those of Cloudy Bay.

 

They are a Kiwi family operated business who are passionate about their products to ensure you have a memorable experience with each wine, whatever your taste. The Scott name is on the bottle, so the family stands behind everything they make.

 

He produces a selection of aromatic varietals to complement his already sought after sauvignon Blanc and Pinot noir. More recently he established the Scott Base winery in Central Otago. A true family affair, Allan still runs the company alongside Catherine, his wife and their children.

 

In the 2011 Air New Zealand Wine Awards the Hounds Pinot noir received a Gold medal, and Allan was rewarded for his wine industry by being given the order of merit for his services to the new Zealand wine trade. Yet still he pioneers onwards – such is his passion for wine.
