The winemaking at Domain du Colombier is headed up by Thierry Mothe, supported by his two brothers Jean Louis and Vincent. The property has been in the family since 1887, and it was their father Guy who turned production to Chablis in 1957. Wines have been bottled at the domaine since the mid 80’s, giving them complete control over the whole process.
A fine and delicate Chablis with aromas of white flowers such as acacia and hawthorn, along with ripe white peach. The palate is full and beautifully weighted exhibiting more fruit and well balanced minerality.
