Background
The Carmenere for this wine was sourced from vineyards in San Jose, Colchagua Valley. The vineyards are located on the slopes of the hill, being a very warm site, which allows for the full ripening. These conditions produce grapes with silky tannins and ripe red fruit aromas. The Syrah comes from a cooler coastal area from Cachapoal Valley, which produces lots of fresh fruit, and a nice acidity
Fermentation was in stainless steel tanks and lasts between 7 to 10 days. During fermentation the fermenting juice was pumped over the skin cap three times a day. After alcoholic fermentation, there was post-fermentation maceration on skins between 7 to 14 days, before pressing. The wine is kept with American and French oak staves for 4 months.
