A brilliant and pure pale gold yellow introduces an expressive but elegant nose of sheer chardonnay personality: ripe apples, white flowers, citrus like lemons and fine tangerines enhanced by touches of butter, honey, hazelnuts and fine spices coming from the most elegant French oak aging.

Fresh and complex, such as the nose, the palate shows a juicy body and a lot of precision. The balance is all about structure and overwhelming texture with a crucial acidity in between that seems to give wings to the natural concentration. The rich, long and vibrant finish is made of white fruits such as pears and apples with dried fruits and a mineral, aniseed touch, well completed by subtle fine spices.

Description

Chardonnay 100%.

STYLE: Balanced, fruity, and elegant, with a touch of oak.

AGE OF THE VINES: 14 years (Tamaya south C-20); 8 years Tamaya north C6; 10)

SOIL TYPE: Alluvial, rocky clay in Tamaya south and sandy loam in Tamaya north

HARVEST: Manual. Grapes are carefully transported to the winery in small containers.

VINIFICATION: The grapes have been harvested by hand during the three first weeks of March and lightly pressed very slowly to allow 6 hours of contact between the juice and the skins. It was then transferred to a stainless steel tank and left to decant until obtaining a high degree of limpidity. The clean juice was transferred to a fermentation tank and inoculated with selected yeasts to highlight the natural aroma of the variety. The fermentation has been slow, between 12 and 16 degrees and 50% went to French oak barrels, new, second and third use to end it. No malolactic fermentation at all. Lees has been worked during all the process in the barrels and in the tank as well. 9 months later, both elements were blended, stabilized, filtered and bottled.

BARREL AGING: Almost 50% of this wine has been fermented in French barrels, mostly 400 lts and a few 300 and 228 lts. The others 50 came from tanks, oak free to preserve balance and freshness. We use 4 generations of barrels coming from different coopers with various toasts and origins. The Barrel aging lasts 9 months with "batonnages" every week and includes 5% of American oak.
