STYLE: Elegant and structured, unusual and complex.
The grapes have been harvested the 8 of February, in small 12 kg containers. The story begins at 6:30 am, when people enter
the vineyard to select only healthy and perfectly ripe bunches. A second selection is made just before entering the press, without
destemming, under gas protection. The press time is around 3 hours, with low pressure and few rotations to obtain the cleanest
and clearer juice as possible. The rape is decanted, and once clean, fermented with selected yeasts. Temperatures are totally
controlled, between14 and16°C, to keep all the potential. When fermentation is well advanced, with '5f of sugars consumed,
one quarter of the juice goes to old 225 lts French oak barrels, to keep on fermenting while the rest is fermented in steel tank.
From fermentation until the end of the process, wine is in contact with its fine lees, removing them twice a week to get better
volume and character. The barrels are checked every week, until finding the perfect balance between fruit and wood. Then, the
wine in barrels goes back to the tank and the barrels are newly filled with the “fresh” wine coming from the tank. The purpose
of this “loop” is to avoid a too heavy oaky character and to preserve all the personality. This process has been done 2 times
during 7 months to reach the final blend.
As unique as ever, this 2012 single vineyard presents a deep and bright pale gold yellow with a nose where complexity is the
key word. First mineral (chalk and stones) with dried herbs, the main profile appears as being straight with a touch of austerity.
Then come gooseberries, green apples and white peaches, a zest of lime with box and broom flowers. A slight exotic starfruit
and passion fruit note also rises, blended with discreet sweet spices.
Volume and deepness are the characteristics of the mouth but, above everything, minerality is the main protagonist here. The
limestone origins take part of the structure, yet deeply shaped by the great and integrated acidity, but also add tactile and tasty
relieves. The concentration of the grape offers an almost fleshy but elegant texture until a great and vibrant finish where
mineral accents are back to enhance the whole complexity.
