Rich and spicy, with charming generosity. While sour cherry, laurel and black olives predominate the nose, the wine tastes medium-bodied and round on the palate, with smooth tannins and crispy acidity.
Grapes: Sauvignon Blanc 95 % Semillon 5%
Vinification: Nocturnal harvest with selective sorting. Direct pressing. Long barrel fermentation. Attention to flavor and freshness. Matured 7 months in barrels (1/4 new) on fine lees with moderate stirring.
Tasting: Perhaps the best Reserve white so far. Citrus, white fruits, citrus skin, flowery and mineral. Outstanding balance, acidity, and richness. Long and fresh. Staying so long in the mouth.
Cellaring: From three to 10 years or more.
Food pairing: Prawns with saffron, fish in sauce, sushi, risotto, foie gras, white meat (veal, roast chicken ...), goat or ewe cheese.

Vinification: Nocturnal harvest, with selective sorting. Individual plot selection. Cold pre-fermentation maceration. Long maceration. 12 months maturation in barrels (1/4 new).
Tasting: A lovely balance between richness and finesse. Rich body softened by subtle flavours and tannins. This wine is a teddy bear. Strong and powerful with a great sensitivity and an unctuous and transparent texture.
Cellaring: From 3 to 15 years
Food pairing: Red meats, game, cheese (eg. St Nectaire), chocolate
Mâcon-Villages Wine in white gold dress with green hues, shiny and soft. On the nose, the aromas suggest broom, white rose, acacia, honeysuckle, fern, verbena, lemongrass, citrus. Pine, quince and fennel appear at the end of the mouth.
It is a fresh and easy-drinking wine, dry but very fruity. It has a good concentration, nuanced by a slight acidity. It can be kept for 2 to 4 years.
