    `Apassimento` means that the grapes are left longer on the vine than usual to increase and concentrate the natural sugars.  The grapes then undergo a period of natural drying so that they become `uve passite` (grapes on their way to becoming raisins).  This wine is concentrated, enormously fruity with a strong backbone of tannins and acidity which balances well against the rich, plummy fruit flavours.

A slight exotic starfruit and passion fruit note also rises, blended with discreet sweet spices.
