Characteristics
Señor da Folla Verde is the most exclusive white wine from our winery, with a limited production of bottles. We only sell 10,000 bottles a year when it comes to this Rías Baixas Albariño wine. For its production, we use Albariño (70%) grapes as well as Loureira (15%) and Treixadura (15%). All of them are cultivated at the Finca La Moreira, where we pick them manually. At the vineyard that we chose for the production of this Albariño wine, we perform green pruning in the summer. What that means is that 40% of the branches are prunted in order to ensure optimal growth in the rest. This Rías Baixas wine pays homage to traditional, nocturnal grapes from the County of Tea.
Elaboration
It is cooled with great care between 5 and 7 degrees and macerated between 14 and 16 hours, with a soft fermentation at 14 degrees that lasts 16 days. Our wine, Señor da Folla Verde, manifests a yellow-beige colour with greenish notes. The aroma, full and sweet, calls to mind mature fruit, with floral traces. Offers a fresh, meaty, selective, warm and different flavour.

Goes with all types of food, especially shellfish, seafood, patés, and smoked foods.
