Characteristics: Light and delicate, the prolonged skin contact extracts maximum flavour into the juice, which is then naturally fermented with the subtle use of oak to round off the palate. The nose and palate mirror beautifully with notes of lime, lychee, orchard fruit, and peaches followed by hints of smoke.
Pairings: It pairs well with seabass, other white fish, and seafood. It goes well with a goat’s cheese salad and herb-driven sauces and dressings.
