Appearance: Ruby with a hint of brick orange
Nose: Fresh and elegant dominated by red fruits (strawberry, raspberry and cherry), spiced notes (pepper). Very characteristic of Pinot Noir.
Palate: Supple, rich in fresh red fruits, smooth tannins
Pairing suggestions: Burgundy snails, meat and vegetable stew, roasted farm-raised chicken, tripe in tomato sauce, black pudding with mashed potatoes, filet mignon of pork with Maroilles cheese, rabbit cooked in beer, chicken paupiettes, Auvergne-style hotpot, chicken tagine, grilled red mullet fillets, Loire pike-perch à l’Angevine, or cheeses like Saint Nectaire, Epoisse, or Mimolette.

Ageing potential: 5 to 7 years
Winegrowing: Slow maceration in stainless steel tank, then punching of the cap, and pumping-over. Ageing in 2 year-old barrel on the third of the volume, during 8 months.
