El Peral Estate, Tupungato. This area was selected for its excellent fruit quality while maintaining freshness on the palate. This is made possible by the significant temperature range in this region.
WINEMAKING TASTING NOTES
The grapes are brought to the winery in the morning to maintain low temperatures. Whole bunches go directly to the pneumatic press, where the optimal moment for separating the must is chosen according to its color intensity. Three days of settling at 8°C, followed by 25 days of alcoholic fermentation with selected yeasts in stainless steel tanks at 14°C, with lees stirring.
